In this segment, Peterhouse takes you on a journey through a kitchen, but not just any old kitchen – a healthy, IQ-boosting kitchen! If you’ve stayed up to date with our blog posts, you’ll know that we recently covered some creative ways to get your toddler to eat vegetables. We had several private messages asking for some of the recipes, so here they are!

1. Zucchini Bread 節瓜麵包

Zucchini Bread - Recipe

a) Preheat your oven to 176 degrees Celsius. Spray your loaf pans with non-stick spray

     將烤爐預熱至176度,然後把麵包放在烤盤上

b) Stir your flour, cocoa, baking soda, baking powder, and salt together

     將麵粉,可可粉,蘇打粉,發酵粉及鹽充分攪拌混合

c) In a separate bowl, beat the sugar, Truvia, and Egg Beaters until light and fluffy

拿出另一個碗,將糖,truvia香料和蛋混合直至蓬鬆

d) Add the Greek yoghurt and vanilla to your dry ingredients. Also add the zucchini and cocoa nibs (optional). Stir all of this until combined then pour into loaf pans!

     在原料中加入希臘優格和香草,同時加入節瓜和可可棒(可選)。將所有原料混合然後放在麵包上。

e) Bake for 40 – 45 minutes for small pans or 50 – 55 minutes for big pans. You’ll know when it’s ready once the tops are cracked and you can stick a knife into the middle and remove it with no mess. Enjoy!

     小烤盤需要烘焙40至45分鐘,大烤盤則需要50至55分鐘。當麵包表層變硬,將刀切入且沒有碎片,那就完成了!

 

 

2. Carrot Zucchini Mini Muffins 迷你甘筍節瓜鬆餅

a) Preheat your oven to 176 degrees Celsius. Coat a mini muffin pan with non-stick spray.

     將烤爐預熱至176度,將迷你鬆餅放在烤盤上

b) Combine the flour, cinnamon, salt, and baking soda in a mixing bowl. Whisk until thoroughly mixed. Put to the side.

     將麵粉,肉桂,鹽,發酵粉放入碗中混合並快速攪拌。先把這個碗放在一邊。

c) In a large mixing bowl, stir together the butter, maple syrup (or honey), egg, and vanilla extract.

     在一個大碗中,將黃油,楓糖(或蜜糖),雞蛋和香草混合。

d) Add the flour mixture to the wet ingredients. Stir together until just barely combined.

     將兩個碗中的原料加在一起,直到充分混合

e) Add the zucchini, carrot, and raisins and stir gently until just distributed.

     再將節瓜,甘筍和提子輕輕攪拌在一起

f) Fill each cup in the mini muffin pan approximately ¾ full

     把所有的原料填滿鬆餅的3/4

g) Bake for 15 – 20 minutes. Insert a toothpick in the middle of a muffin and it should come out clean. Yum!

     烘焙15至20分鐘,試著將牙籤插入鬆餅,如果牙籤還是乾淨的,那就大功告成!

 

 

3. Fruit & Veggie Smoothie 水果&蔬菜沙冰

a) Add the grated carrots and a few tablespoons of orange juice to a food processor. Puree this.

     甘筍和橙汁加入食物料理機,打成果泥。

b) Add everything to a blender. Blend until smooth.

     將所有原料加入攪拌機,直到變成沙冰。

c) Serve straight away!

     即刻食用!

 

 

4. Carrot, Mango & Raspberry Popsicles 甘筍,芒果,覆盆子棒冰

Carrot, Mango & Raspberry Popsicles - Recipe

a) Cut carrot into large chunks. Place into a microwave-safe bowl and add a splash of water. Cover and microwave for ~3 minutes (until tender). Drain the water and cool for 10 minutes.

     將甘筍切成大塊,放入可微波加熱的碗內,並倒入水。在微波爐內加熱約3分鐘,直到甘筍變軟,再冷卻10分鐘。

b) Peel mango and cut flesh from the centre pip. Place the mango chunks in a blender along with your cooked carrots, raspberries, sugar, and water. Blend until smooth.

     芒果去皮,切出果肉,再和處理過的甘筍,覆盆子,糖和水一起放入攪拌機,直到打成沙冰。

c) Pour blended mixture into popsicle moulds and freeze. Remember to add wooden popsicle sticks at the right time! So keep an eye on your product. Enjoy!

     將沙冰倒入棒冰模具,放入雪櫃。記得將棒冰的棒在合適的時間放入模具!不用多久就能吃到新鮮棒冰了!
